Why buy store-bought tortillas filled with preservatives when you can make these vibrant, healthy sweet potato wraps in minutes? The natural sweetness of the potato comes through subtly, the colour alone will stop people in their tracks.
The dough comes together with just two real ingredients — mashed sweet potato and flour. No eggs, no dairy, no complicated technique. Roll them thin, cook them dry, and they flex without cracking. Fill with whatever you love. We used halloumi and tzatziki — absolutely unreal.
Sweet Potato Wraps (2 Ingredients)
- 🥣 Large mixing bowl
- 🍴 Fork or potato masher
- 🔄 Rolling pin + floured surface
- 🍳 Dry non-stick pan or skillet

1Boil or roast the sweet potato until completely soft. Peel and mash until smooth — no lumps.

2Add flour gradually — start with 1 cup and mix in. Keep adding until a soft, non-sticky dough forms. It should feel like playdough.

3Divide into 6 equal balls. Dust your surface lightly with flour.

4Roll out each ball thin — aim for 2–3mm thickness, like a regular tortilla. The thinner, the more flexible.

5Cook in a dry pan over medium heat for 1–2 minutes per side, until golden brown spots appear. No oil needed.

6Fill and fold! We used halloumi and tzatziki — incredible. But any protein and veggies work beautifully.
- 🍠 Add flour gradually — the amount needed depends on the water content of your potato. Start with 1 cup and adjust.
- 🌾 Gluten-free? — Use a GF flour blend instead of all-purpose. Works just as well.
- 🔥 Keep them warm — stack cooked wraps under a clean cloth to keep soft and pliable.
- ❄️ Store — keep in an airtight container in the fridge for up to 3 days. Reheat 30 seconds in a dry pan.
