Crispy Mozzarella Potato Pockets
- 🍲 Large saucepan (for boiling)
- 🥔 Potato masher
- 🍳 Non-stick frying pan or skillet
- 🍴 Spatula

1Boil Potatoes: Cut the peeled potatoes into small, even cubes. Add to a pot of boiling salted water and simmer for about 10 minutes until fork-tender. Drain well and leave to cool for 5 minutes.

2Mash & Form Dough: Thoroughly mash the potatoes in a large bowl. Add cornflour (cornstarch), grated Parmesan, salt, and black pepper. Knead with your hands until a soft, smooth dough forms.

3Stuff & Shape: Divide dough into 6 equal portions. Flatten each ball into a disc, place mozzarella in the center, and fold dough over to seal completely. Gently press into a thick patty/cake shape.

4Pan Fry: Heat olive oil in a skillet over medium heat. Fry the potato pockets for 3–4 minutes per side until deeply golden brown and crispy.

5Rest & Serve: Remove using a spatula and rest on paper towels for 3–5 minutes so the crust sets up extra crispy. Serve warm for maximum cheese pull!
