Healthy Tiramisu Date Cake
- 🥣 Large mixing bowl
- 🍴 Fork or potato masher
- 🟫 8-inch baking tin or dish
- 📄 Parchment paper

1Make the date paste. Pit the dates and pour hot brewed coffee over them. Let sit 5 minutes, then mash into a smooth paste with a fork.

2Preheat oven to 180°C (350°F). Line your baking tin with parchment paper.

3Mix in the remaining ingredients — add oat flour, cocoa powder, baking powder, and egg to the date paste. Fold in chocolate chips. Mix until just combined, don’t overmix.

5Bake for 25 minutes until a skewer comes out clean. Let cool completely before adding the topping — at least 20 minutes.

6Make the topping — mix Greek yogurt with maple syrup until smooth. Spread over the cooled cake, then dust generously with cocoa powder.

7Slice and serve. Refrigerate leftovers — the yogurt topping sets beautifully overnight and the flavour deepens. Even better the next day. 🤤
