  • โœ“7 medjool dates โ€” pitted
  • โœ“ยฝ cup warm milk (dairy or any plant-based)
  • โœ“1ยฝ cups desiccated coconut
  • โœ“1 tsp baking powder
  • โœ“Chocolate chips (optional but highly recommended ๐Ÿซ)

Optional extras: pinch of sea salt for salted caramel vibes, vanilla extract, cinnamon

Preheat oven to 180ยฐC (350ยฐF). Line a baking tray with greaseproof paper and set aside.

Make the date paste โ€” place pitted dates in a bowl and pour over warm milk. Leave for 2โ€“3 minutes to soften, then mash with a fork into a thick, smooth caramel paste. The riper the dates, the easier this step is.

Mix the dough โ€” add desiccated coconut and baking powder to the date paste. Stir well until everything is combined into a sticky dough. Fold in chocolate chips if using.

Shape the cookies โ€” scoop 1 heaped tablespoon of dough per cookie onto the lined tray. Press each one down gently with your fingers or the back of a spoon into a flat round disc. They won’t spread much in the oven.

Bake for 10โ€“13 minutes until the edges are golden brown and the tops look set. They will firm up as they cool โ€” try to let them cool for 5 minutes before eating. Try. ๐Ÿช
