Soft Gluten-Free White Bread
- 🥣 Stand mixer with paddle attachment (or hand mixer)
- 🍞 9×5-inch loaf pan OR baking sheet with parchment paper
- 🔪 Bread lame or sharp knife for scoring
- 📐 Instant-read thermometer (optional)

1Activate Yeast: In a small bowl, combine warm water (about 110°F / 43°C) and sugar. Sprinkle yeast on top and let sit for 5–10 minutes until foamy.

2Combine Dry & Wet: Whisk gluten-free bread flour blend and salt in a stand mixer bowl. Add the foamy yeast mixture, melted butter, room temperature egg, and apple cider vinegar.

3Mix Dough: Beat on medium speed with the paddle attachment for 3–4 minutes until a smooth, thick, slightly sticky dough forms (it will resemble a thick batter rather than traditional wheat dough).

4First Rise & Shape: Let rise in a greased, covered bowl for 45–60 minutes until puffy. Turn out onto parchment paper. With wet hands, shape into an oval or place into a greased loaf pan.

5Second Rise & Score: Cover loosely and let rise for 30–45 minutes until domed. Brush top with milk/egg wash and use a lame or sharp knife to make 3–4 diagonal slashes across the loaf.

6Bake: Bake at 375°F (190°C) for 35–40 minutes until deep golden brown and the internal temperature reaches 205–210°F (96–99°C).
