1Preheat oven to 180°C (350°F). Line a baking tray with greaseproof paper and set aside.

2Make the date paste — place pitted dates in a bowl and pour over warm milk. Leave for 2–3 minutes to soften, then mash with a fork into a thick, smooth caramel paste. The riper the dates, the easier this step is.

3Mix the dough — add desiccated coconut and baking powder to the date paste. Stir well until everything is combined into a sticky dough. Fold in chocolate chips if using.

4Shape the cookies — scoop 1 heaped tablespoon of dough per cookie onto the lined tray. Press each one down gently with your fingers or the back of a spoon into a flat round disc. They won't spread much in the oven.

5Bake for 10–13 minutes until the edges are golden brown and the tops look set. They will firm up as they cool — let them cool for 5 minutes before eating. Enjoy! 🍪
