  • βœ“1Β½ cups desiccated coconut
  • βœ“1 tsp baking powder

Preheat oven to 180Β°C (350Β°F). Line a baking tray with greaseproof paper and set aside.

Make the date paste β€” place pitted dates in a bowl and pour over warm milk. Leave for 2–3 minutes to soften, then mash with a fork into a thick, smooth caramel paste. The riper the dates, the easier this step is.

Mix the dough β€” add desiccated coconut and baking powder to the date paste. Stir well until everything is combined into a sticky dough. Fold in chocolate chips if using.

Shape the cookies β€” scoop 1 heaped tablespoon of dough per cookie onto the lined tray. Press each one down gently with your fingers or the back of a spoon into a flat round disc. They won’t spread much in the oven.

  1. This sounds wonderful they have. I do a low carb high protein diet have for several years lost 160 lb and of keeping it hot. I would have to have for one cookie. I would need to have protein protein higher than 12 carbs for one cookie which could be a yogurt. Three string cheeses a can of sardines lol which is really good. Do you have any low carb high protein cookies that can turn out like this? Or I could maybe add some protein powder to the ingredients. Don’t know if it would what it would do though.
