π₯₯ Why Everyone Is Obsessed
π‘ Pro Tips for Perfect Cookies
- π―Riper dates = better cookies β the softer and more caramel-like your dates are, the easier they mash and the more intense the natural sweetness.
- π§Add a pinch of sea salt β sprinkle flaky sea salt on top before baking for an incredible salted caramel flavour that takes these to the next level.
- πͺThey firm up as they cool β don’t overbake trying to get them firm. They’ll look slightly soft coming out of the oven but set perfectly within 5 minutes.
- π§Freeze for up to 1 month β bake a big batch and freeze. Defrost at room temperature for 20 minutes β they taste freshly baked every time.

β Frequently Asked Questions
Can I use regular dates instead of medjool?
Yes β soak them in warm water for 15 minutes first to soften before mashing. Medjool dates are naturally softer and more caramel-like, but any dates work.
Can I use shredded coconut instead of desiccated?
Yes, but pulse it briefly in a blender first to break it down a little β shredded coconut is longer and coarser, which can make the cookies harder to shape.
My cookies are crumbling β what went wrong?
The date paste isn’t sticky enough β add a little more warm milk (1 tbsp at a time) and mash again. The mixture should hold together when squeezed in your hand.
How long do they keep?
Up to 5 days in an airtight container at room temperature, or 1 week in the fridge. Freeze baked cookies for up to 1 month.

What is the vegan
This sounds wonderful they have. I do a low carb high protein diet have for several years lost 160 lb and of keeping it hot. I would have to have for one cookie. I would need to have protein protein higher than 12 carbs for one cookie which could be a yogurt. Three string cheeses a can of sardines lol which is really good. Do you have any low carb high protein cookies that can turn out like this? Or I could maybe add some protein powder to the ingredients. Don’t know if it would what it would do though.
