Leftover mashed potatoes are the secret to the softest, most pliable flatbread you’ve ever made at home — no yeast, no rising time, no complicated technique. The starch in the potato acts as a natural binder, giving you a dough that rolls beautifully thin without cracking.

      Boil the potatoes until completely soft. Drain very well — excess water will make the dough sticky and hard to work with. 💧 Drain well! Mash until completely smooth.

      Mix while still warm — add flour, grated vegan cheese, chopped parsley, salt, pepper, and garlic powder into the warm mash. Mix until a soft dough forms. Shaping potato dough

      Divide into 4 equal pieces. Dust your surface with flour and roll each piece out thin — about 3mm. The thinner, the better the texture. Lifting raw flatbread

      Brush with vegan butter immediately while still hot — this is what gives them that incredible buttery finish. Serve right away.
    Notes
    • 💧 Drain the potatoes very well — wet mash makes sticky dough that won’t roll properly.
    • 🌡️ Mix while warm — the heat helps the flour incorporate evenly and makes the dough more pliable.
    • 🧀 Regular cheese works too — use cheddar or parmesan if not vegan.
    • 🌿 Herb swaps — try chives, coriander, or rosemary instead of parsley.
    • 🍛 Serving ideas — curries, hummus, tzatziki, soups, or use as a wrap base.
    • ❄️ Storage — stack with parchment between each, keep in fridge up to 3 days. Reheat in a dry pan 1 minute each side.
