1Preheat & Roast Potatoes: Preheat your oven to 200°C (400°F). Scrub sweet potatoes clean, pierce several times with a fork, place on a baking tray, and bake for 45–50 minutes until completely tender.

2Create Potato Boats: Slice each potato in half lengthways. Scoop out some of the flesh from the center using a spoon to create a well, leaving about 1cm border around the edges.

3Whisk Egg Filling: In a bowl, whisk eggs with milk. Season with salt, pepper, and chilli flakes if using. Stir in the finely chopped spring onion and red bell pepper.

4Fill & Top: Pour the egg mixture evenly into each sweet potato half. Top generously with crumbled feta cheese.

5Bake & Serve: Return to the oven and bake for a further 15–20 minutes until the egg filling is fully set and the feta cheese turns lightly golden. Garnish with fresh herbs and serve hot!
