Two ingredients. One bowl. 30 minutes. That is literally all standing between you and fresh, bakery-quality bagels at home. The magic comes from combining thick Greek yogurt with self-rising flour to make a soft, pliable dough that rises beautifully without any yeast.
Whether you’re prepping breakfast for the week or looking for a quick, guilt-free weekend brunch, these high-protein bagels freeze like a dream. Pop one in the toaster straight from the freezer for a fresh-baked crunch every morning!
2-Ingredient High-Protein Bagels
- 🥣 Large mixing bowl & fork
- 🥖 Baking tray & parchment paper
- 🖌️ Pastry brush (for optional egg wash)

1Preheat & Prep: Preheat your oven to 180°C (350°F). Line a large baking tray with parchment paper.

2Mix the Dough: In a large mixing bowl, combine the thick Greek yogurt and self-rising flour. Stir with a fork until crumbly, then knead with your hands for 1–2 minutes into a soft dough. If too sticky, add flour 1 tbsp at a time.

3Divide & Shape: Divide dough into 4 equal portions. Roll each piece into a rope (about 20cm long) and join the ends together to form a bagel ring, or roll into a ball and poke a hole through the center.

4Glaze & Add Toppings: Place bagels on the prepared tray. Brush with beaten egg wash for a golden shine, then sprinkle generously with everything bagel seasoning, sesame seeds, or poppy seeds.

5Bake & Cool: Bake for 20–22 minutes until deeply golden brown and cooked through. Allow to cool for 5 minutes before slicing open and serving!
- 🥛 Full-Fat Greek Yogurt: Use plain, thick Greek yogurt. Full-fat yogurt contains less water, making the dough much easier to shape without extra stickiness.
- 🌾 DIY Self-Rising Flour: Don’t have self-rising flour? Mix 1 cup all-purpose flour + 1½ tsp baking powder + ¼ tsp salt.
- 🥚 Don’t Skip Egg Wash: Brushing the tops with beaten egg before baking gives that authentic bakery-style golden shine and locks the toppings in place.
- ❄️ Freezer Meal Prep: Slice baked bagels in half and store in freezer bags for up to 3 months. Toast directly from frozen!
