Healthy Peanut Butter Breakfast Cookies
- 🥖 Large baking sheet & parchment paper
- 🥣 Large mixing bowl & fork
- 🥣 Medium mixing bowl

1Preheat & Prep: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper. Roughly chop the walnuts and set aside.

2Mash & Mix Wet Ingredients: In a large mixing bowl, mash the bananas with a fork until mostly smooth. Add the creamy peanut butter, plain Greek yogurt, egg, pure maple syrup, and vanilla extract. Whisk thoroughly until smooth and well combined.

3Combine Dry & Fold Mix-ins: In a separate bowl, whisk together the rolled oats, ground cinnamon, baking powder, and sea salt. Stir the dry ingredients into the banana mixture. Gently fold in most of the mini dark chocolate chips and chopped walnuts (reserve a small portion for toppings).

4Scoop & Shape: Scoop the dough into 12 equal portions onto the prepared baking sheet. Gently press them down into round cookie shapes (they won’t spread much during baking). Press the reserved chocolate chips and walnuts into the tops.

5Bake & Cool: Bake for 12–15 minutes until set and lightly golden around the edges. Allow to cool on the baking sheet for 10 minutes before serving or storing.
