No-Bake Date & Nut Energy Bars
- 🍳 Non-stick pan or skillet
- 🖼️ Small loaf pan or square baking tin
- 📄 Parchment paper
- 🥄 Spatula or wooden spoon

1Soften Dates: Warm a small amount of coconut oil in a pan over low-to-medium heat. Add the pitted Medjool dates and stir with a spoon for 2–3 minutes until soft, sticky, and easily mashable.

2Form Sticky Dough: Add the rolled oats, chopped nuts (almonds or walnuts), pumpkin seeds, sunflower seeds, and cocoa powder to the pan. Mash and mix vigorously until everything forms a thick, uniform, sticky dough.

3Press into Pan: Line a small baking tin with parchment paper. Transfer the date-nut mixture into the tin and press down firmly using a spatula or flat glass to create an even, tightly packed layer.

4Chocolate Coating & Toppings: Pour the melted dark chocolate evenly over the pressed bar layer. Sprinkle with mixed seeds and dried goji berries for texture and color.
