Ingredients
Scale:
💡 Key tip: Use only the thick top part of coconut milk — refrigerate the can overnight and scoop the solid cream. This makes the filling rich and holds its shape perfectly.
Instructions
-
1Mix the filling — combine desiccated coconut, thick coconut milk, and maple syrup in a bowl. Mix until a sticky, moldable dough forms. If too wet, add more desiccated coconut 1 tablespoon at a time.
-
2Shape into bars — divide the mixture into equal portions. Roll each into a small log shape about 6cm long. Place on a lined baking tray.
-
3Freeze for 10–15 minutes until the bars are firm enough to handle and dip without breaking apart.
-
4Dip in melted chocolate — using a fork, dip each frozen bar into the melted dark chocolate until fully coated. Let excess drip off and place back on the lined tray.
-
5Refrigerate until set — about 15–20 minutes. Try not to eat them all at once! ✨
Pro Tips for Perfect Bounty Bars
- 🥥Only use the thick coconut cream — refrigerate the can overnight and scoop only the solid top layer. Liquid coconut milk will make the filling too wet.
- 🍫Use 70%+ dark chocolate — higher cocoa content gives you that authentic Bounty flavour and the most satisfying snap.
- 🍴Use a fork to dip — place the bar on the fork and lower into chocolate, then tap the fork on the edge of the bowl to remove excess coating.
- ❄️Freeze for 3 months — make a big batch and keep in the freezer. They're incredible eaten straight from frozen!

❓ Frequently Asked Questions
Can I use sweetened desiccated coconut?
Yes, but reduce the maple syrup to 1 tbsp or skip it entirely — sweetened coconut plus maple syrup can make the filling overly sweet.
Can I use honey instead of maple syrup?
Yes! Honey works perfectly. Note that using honey makes these bars no longer strictly vegan, but the flavour is delicious.
My filling is too wet — how do I fix it?
Add more desiccated coconut 1 tablespoon at a time until the mixture holds its shape when pressed. This usually happens if the coconut milk was too liquid.
How long do they last?
Up to 1 week in the fridge in an airtight container, or 3 months in the freezer. They honestly taste even better on day 2!
